The problem with a Monsters Inc ride is two fold:
-Direction: Do you use the idea of energy, or do you just go for the thrill? Does boo play a part, or is it just a ride on it's own that stands alone from the movie?
-The Movie- while a good movie, it dosn't have much in terms of offerings for a ride. If you do one based on the story, you loose something, if you do it on one part of the ride, it just seems out of context. It dosn't mean a ride wouldn't happen, you just have to be VERY CAREFUL when it comes to the design and story so it takes EVERYTHING into account to create a complete feeling.
Hope this helps. Good to see someone likes a Monster Inc ride more than to just slap it onto Universe of Energy.
