I've done it, solo. Or at least something similar.
First, your mom is right that SOME people had spring break last month, but the 18th of April is smack in the middle of the breaks many schools have. Not everyone does Spring Break in March, many schools (notably in the north east) take one week in Feb. and one week in April. The crowd projections for those dates aren't bad, but don't expect January crowds either. Take it as a big hint that the MK is open until Midnight on a Monday.
As to how I'd do it, I'd skip a couple of the longer attractions on your list (mostly at Epcot, especially since it's EMH morning there that day). If you want to do a 1-day highlights tour, this is how I would do it :
1. Start at MGM. Be there well before 9AM, and in line ready to go. Immediately get a FP at ToT, then ride RnR stand-by. After RnR, do GMR (the line shouldn't have gotten that bad by then). By the time GMR is over you should be just in time for your ToT FP. If you do this right, you can be out of the park in 90 minutes.
2. Transportation between Epcot and MGM is usually pretty quick, but let's say you don't get over there until 11:30. Now, most people would say I'm crazy for telling you to go this time of day to Epcot on an EMH morning, but it's better to face the music and get it over with, especially since you probably had little to no wait at MGM. Expect to wait in some lines at this point. Since Soarin' will not likely be open, I'd limit Epcot to just M:S and TT unless you are really lucky and get out of there quickly. Using the single riders line if you can, even worst case scenario you are walking out of Epcot around 3(that gives you more than three hours to see those two attractions and hit another if you have the time - SSE maybe on the way out).
3. The reason for dealing with Epcot at lunch is because by now, AK will be deserted. After the 3PM parade it really empties out. Even if you don't get there from Epcot until 4 (you will likely get there sooner) you can very easily hit Dinosaur and Primeval Whirl and still make it to ITTBAB before the last show. If you get there before 4, you will probably be able to fit Kali in as well. Although AK is pretty big and convoluted, all of those rides are in rather close proximity to each other. I routinely end my day with ITTBAB - they let people in until the last minute and since it's a show you can relax while the rest of the park is closing.
4. Now all that's left is MK. You should be able to get there by 6 or 6:30. That gives you 5.5 hours to see HM, PotC, BTM, Splash, and Space. That's plenty of time, especially since after 10:30 or so people start leaving. I've ridden HM, PotC, BTM, and Splash in that last 90 minutes very easily (as long as you don't mind walking quickly).
It can be done if you eliminate the extra attractions at Epcot. I wouldn't recomend it with a large group that had small children or grandparents, but if you've got the energy it is possible to see all of the E-tickets in one day.
If you get rid of Epcot from your itenerary, you could actually do this and have a pretty relaxed day. Epcot is really the biggest issue you will have.
