With the "artists" they can hire and have access to, how does this happen?

Easy. People approving stuff didn't recognize the style. Artist designing it thought it was a unique enough take to be kosher. Manager requesting artwork said "Make it look like this artist I really like". Stuff happens. Isn't there a saying to the effect of there is nothing new in Hollywood, just everyone ripping off everyone else? And while this seems to be a bit more than just being subconsciously influenced by works of art, almost everything we do and make is influenced by things we have seen, even when we try to be completely original.

The fact that they realized it wasn't quite right and pulled it without needing a huge uproar of complaints (that I've noticed) is saying something. There are several large chains that blatantly rip of smaller artists work all the time and don't do squat even when they get called on it.

I guess it could also be a rouge artist liked the style and tried to duplicate it thinking the artist's work was not very well known, but in the internet age I would say this stuff will be found more and more.... I agree that we are influenced by things, but yes this is more than subconsciously influenced, it looks like a straight up copy!

Great point, unless there is a behind the scenes Cease and Desist.
