help with some questions first time going on any cruise

Cabana's is definitely still open. I think you'll definitely enjoy it. But be aware that dinner is not necessarily the buffet that you're thinking of. From the DCL website:

Boasting a selection of tantalizing favorites, Cabanas offers fine food for everyone in your family during a delightful 4-course meal. Although subject to change, dinnertime menu items include signature dishes from the Main Dining restaurants and casual dining specials.

Notice that dinner is a 4-course meal, just like in the rotational restaurants. There will be "casual dining specials", but it's not the typical buffet that they serve at breakfast and lunch.

another follow up question when ordering RS if I wanted the cheesecake that I know is on a menu in a restuarant will they do that. not impressed with the RS dessert offerings. I am a late night snack eater especially on vacation. DH will eat the duck and the wild boar I on the other hand would not so far the NY strip steak has been only entree that sounds like I would eat it and not waste a plate of food wish I was more of a foodie

Try not to be put off by the dining room menus. Disney knows their market, and they do a good job of catering to it.

The food in the dining rooms may be called "fancy" but it is by no means off the map of middle America's taste buds. The descriptions may sound impressive, and the food may look impressive, but it is nothing crazy. Standard cuts of meat, standard preperations of fish, etc. All done very well, but nothing that I would go so far as to call exotic.

My suggestion, give the dining rooms a try - you did pay for them after all. You can order multiple dishes if you so wish. They will even bring of small portions of various dishes for you to try if you wish. Here is your chance to try new things you may like without paying extra for it. New things that are still quite "safe". And, after all is said and done, if you liked nothing, and you are still hungry then you can go up to the pool deck and eat a burger if you so wish.

I don't mind trying new things but I do hate wasting food and always feel guilty when they come to take my plate and I have eaten 2 bites off it lol...

Ask for a taste. Tell them you don't want the whole entree, but you're really interested in trying it. They'll either bring you a small portion of the meal, or they will bring the main part of the entree without the "sides". I do this a lot and it's never a problem. Occasionally, you get a server who says, "I just brought the whole meal so everybody can have a taste", but usually, they're happy to bring you a taste.

Exactly.

Dining on the cruise is a totally different kind of dining. Where in a normal restaruant you would never think of asking for just al ittle but of something, on the ships they get this request all the time. People order multiple things, people ask to share dishes, some even make dinners pretty much a tasting menu. You really have the ability on a DCL cruise to customize your dining experience.
