Help Planning Disneyland Trip- 2 days or 3?

We had two full days in the summer of 2014 (which I can't believe is three years ago already!). We did one park per day from open to close, and it was enough time to do everything we absolutely wanted to do with lots of extras (and one of our days was a Grad Nite so it was rather crowded). We skipped sit-down meals for time.

Okay, that is good since we are going in off season and spending the same amount as you in the parks.

Hopping in on this to ask a few questions:

For a three-day trip, is getting a dining package to see Fantasmic! worth it?

Are there any rides that we should ask for a certain seat on? For example, we always ask for the front row on Everest and Rock 'n' Rollercoaster, and the back row on Big Thunder.

Are there any tours or the like worth doing while we're there, or should we just stick to the parks?

On Matterhorn, don't get a Fastpass, go early and get in standby line.

The standby line side is noticeably faster than the side of the mountain that Fastpass users get put on.
Me and both of my kids couldn't believe the difference.

And on Big Thunder, don't sit in the front. The further back you are, the better.

Are the tracks on Matterhorn different enough to justify riding both, or is it equivalent to WDW's Space Mountain (essentially mirrors)? We're trying to avoid videos or I'd just look it up on Youtube.

Definitely use park hopper for Disneyland Resort. No sense of staying one day exclusively at DCA. Your better off doing two parks at once.

For someone who native to Southern California, I used to go one day of the year to 6 times in a year. I can tell you it better to do two parks at once. Spending a stay exclusively at DCA is such a borefest. DL and DCA is not large and spread out like WDW parks. They are very condensed parks. But DL has so much density to see every nooks and cranny unlike DCA, there isn't much to explore. So highly recommend to do both parks at once.
