If you walk out to the beach and head to the right (toward the TTC) there is a nice point that is above most of the beach and a good spot in general. If you look at one of Poly's maps it is listed as "Sunset Point". It is to the right if you come out onto the beach by the main Volcano pool. Might be a good bet. :)

People have also got married in this spot. It's on a little hill with palm trees overlooking the lagoon. Perfect place for an engagement!

Well since she has never been to Disney I would do a nice dinner. Of course I was the sappiest guy in the world and proposed at CRT, Over looking Fantasyland, on Valentines evening 2007. After spending a whole day at Epcot and MK, and buying her a leave a legacy plaque, the 2007 vday pin set, and more. It was the best money ever spent. We got married last November and moved out of state and I miss DISNEY I WANT TO GO TO DISNEY AGAIN.

Anyways CRT was awesome and having everyone watching and her shocked look was awesome, My profile picture is from then. Dinner is your best bet and Disney has tons of options for proposals.
