Definitely try The Walking Dead. It has one of the best pilots you will ever see. And even at its worst, its just fun to watch.
Game of Thrones: Watch it. Just watch it and avoid anything on the internet about it until you catch up. George RR Martin will draw you in, make you want to throw something in anger, and you will like it.
The Americans: Its does a great job of fleshing out players on both sides. One minute you are Team 'Murica and the next you are cheering for the Commies. Plus Mags Bennett from Justified is on it.
Hannibal: I fully expected this show to stink. It turned to be really engrossing, and is just beautifully shot. They really do a great job of building up the menace around Hannibal. And you can really feel the toll seeing all these murders takes out on the main investigator. Plus its just damn weird a lot of the time.
Mad Men: It can be slow and plodding, a fun caper, a drug fueled comedy, a psychological thriller, and a fascinating character study all in one episode.
