Going with a 12 year old boy

My boyfriend couldn't get the time off work, so I'm bringing my nephew in February instead. He's 12 and has never been to WDW before... I need some help, I've never been with a kid before
I know we're going to take a day out to go to Universal (I'll probably get a 1 day park hopper, he mostly wants to go to IoA but I know he'll love The Mummy and The Simpsons.)
Any TS suggestions for a VERY picky eater? He's 12 but he'd probably mostly eat off the kids menu since he pretty much lives off chicken, pizza and the occasional carrot. He doesn't even like hamburgers. I'd say we could try a buffet but neither of us is interested in character dining.
What would be a must do for his first trip to WDW, other than the thrill rides (that's easy)?

Some suggestions I have, renting watersprites, horseback riding, mini golf or possibly a dinner show like Hoop De Doo(ribs and chicken) or Mickey;s Backyard BBQ. Hope some of these help.

My 13 year old is crazy picky. He eats about 5 things. Luckily all the TS places we ate at let him order off the kids menu. He actually loved Le Cellier. The kids dessert there is awesome, and he loved the pretzel bread they brought out. His other favorite would definitely be the buffets. He doesn't care about the characters but he'll take them if he can eat at a buffet!

For him it's definitely about the thrill rides, you're right that's easy. He also really liked the Extreme Stunt Show at DHS. I don't know if the water parks are an option, but he could live at a water park.

I just asked him and he said the food.

Sounds like some great ideas. I hope you guys have a great time. Where is the horse back riding?

They offer trail rides at Fort Wilderness :)

Thanks for all the suggestions! The thing about character dining is it's pretty expensive if you don't care about seeing the characters. I'm going to make a reservation at Trail's End for a buffet and try to remember to keep it (I totally forgot about it on my last trip) and then we'll go to simple places like The Plaza, Beaches and Cream and hopefully 50s Prime Time.
Thank you for reminding me about the stunt shows! I usually tend to skip them but he'll definitely love Indy and probably LMA too.

Oh yes I want to go to a water park too. I need to check but I really hope it's Blizzard Beach open during that time because I want to try Summit Plummet so bad but my boyfriend won't go to water parks
