After trying to get the specifics about how to eschange the "Give A Day, Get A Day' here, I just finished my trip and will tell you exactly how the Fastpass Special Exchange Card works.
First you need to sign-up for and complete your volunteer service and you will get an email from Disney on how to print up your vouchers. Entire families can do this as long as the children are 6 yrs. and older.
IMPORTANT-You can use 1 voucher per day for your entire party. If you are planning on being in the parks for 7 days, you only need one voucher for your entire party, but everyone in your party has to have volunteered and have a valid voucher. (They say you will get 5 vouchers for your party plus the one for you, but we were able to get 8 per day because all 8 of us had valid vouchers)
In the morning, go to the WILL CALL window and turn in one voucher with your entire parties multi-day tickets or valid Annual pass. YOU MUST have identification for the one redeeming the voucher. If they are under 18, a copy of a birth certificate is required!
You will get a plastic card that you use in the Fastpass kiosk and you get an IMMEDIATE FASTPASS!! No waiting! Just walk right on!
This is a list of all the rides available at each park. You get to choose 3 rides from each group. One group is called the "Donald Group" and the other is the "Daisy Group' You can ride one ride 3x in a day, but you can only choose 3 from each group.

DISNEY'S HOLLYWOOD STUDIOS: DONALD GROUP-Tower of Terror, Rock "n" Roller Coaster, Toy Story Mania DAISY GROUP-Star Tours, Lights, Motors Action, Little Mermaid
EPCOT: DONALD GROUP-Test Track, Soarin' DAISY GROUP- Mission: Space, Living with the Land, Honey, I shrunk the audience, Maelstrom
ANIMAL KINGDOM: DONALD GROUP-Expedition Everest, Kilimanjaro Safaris DAISY GROUP- Kali River Rapids, Tought to be a bug, Dinosaur
MAGIC KINGDOM: DONALD GROUP- SPace MOuntian, Big Thunder Mountain Railroad, Peter Pan's Flight, Winnie the Pooh DAISY GROUP- Jungle Cruise, Mickey's Philharmagic, Stitch's Great Escape, Buzz Lightyear's Space Ranger Spin.

You can also turn in your voucher for a special "Mickey Ears" statue with 4 pins on it. It is special to volunteers only. On our last day at the parks, I told the woman that we had 3 vouchers left, so she let me turn in one fot the 8 fastpasses and then she allowed us to turn in the other 2 for the special statue.

We flew through the rides with these special fastpasses and rode multiple ones many times over using our park tickets and special fastpasses together.

I know this might have been mentioned before but I'm new and I wanted to say it anyways, lol.

My sister, bro in law, and I are going to WDW on Sunday. We did the volunteer thing and got our tickets. We were planning to buy 5 day tickets and then use the free ticket for a 6th day. Well, during a phone call to the Disney reservation line, my bro in law mentioned the free passes. The woman from Disney told us this.....

Each free pass has a value of $79. For 3 people to go for 6 days, multi-day tickets will cost $693. If we wait and buy all of our tickets at WDW and not in advance, WDW will take $79 off that $693 for every free pass we have. So, instead of paying $693, we will be getting 6 day tickets for $456. Obviously everyone will have a different price so just take off $79 x however free passes you have.

When my bro in law told me this, I was sure he was wrong and had misunderstood the Disney people about something. Why would Disney give such a huge discount like that? Well I called the Disney reservation line myself 3 separate times and talked to 3 different people and asked them about this. All 3 of them said it was true, they just don't publicize it but if someone asks then its an option. I guess they're banking on most people doing what we were going to do originally and buying tickets in advance or using them for the fastpasses. I'll go for $237 discount any day over some fastpasses. Like I said, the only bad thing is that you have to wait to actually buy your tickets when you get down to WDW. If anyone finds that Disney tells them something different about this then please let me know.

Anyways, I just wanted to throw that option out there to anyone who might not have known about that yet. I'm new to the boards so don't hate on me if I'm posting old news.
