If I book a trip and free dining is available on the 4th day of our 5 day trip do we get free dining for the entire trip or just when it becomes available??

You need to check-in during the Free Dinning Promotion date range in order for it to apply to your length of stay.
You could however, check-in on the last day the promotion is offered... and have it applied to your entire length of stay.
If you decide to 'book' free dinning during the middle of your stay... don't forget it requires a package (room and tickets)

Your checkin date must be within the free dining dates. So if free dining starts on your 4th day, then no you wouldn't be elegible.
