So we may extend our stay a few days to be there on 8/29 for GE, but we are still up in the air about it. Now what would make us stay is if the Food & Wine Festival started say on Monday, the 26th. For the past few years, Food and Wine has begun on the Thursday before Labor Day and we keep missing it because we have to get home. Would it pay for Disney to have Food and Wine up and running earlier to absorb some crowds (and our $$)?

You can use your logic for every single event that Disney puts on.

Would it pay for Disney to have Food and Wine Festival of Lights/Christmas/Halloween/New Year's/Easter/Memorial Day events up and running earlier to absorb some crowds (and our $$)?

The answer is always yes. They could do all of this all year.

Your question get to the very reason that Disney has nightly fireworks shows. They use to be infrequent and on weekends. But little Susie's mom told Disney that her daughter's vacation didn't extend into the weekend; they leave on Friday... Now we have nightly fireworks.

I would think SGE is probably one of the most anticipated openings outside of a new theme park, no?
