I can get why they did it though. 2015 is going to be a big summer for blockbusters so why not push it back a year to get the biggest bang.

But Ellen is just a voice actor...and she seems ready to go with this project too. Maybe it's because the Good Dinosaur was delayed, they can't really get to work with Dory?

Basic project management. Constrained resources (fairly static headcount) means, all else being equal, schedule has to be elastic to accommodate any issues. Like in Dino post-prod. Unless anyone knows of a few hundred Pixar-caliber employees who will work for nothing, situation stays as it is.
