Festival Food?

Now that 2017 Food and Wine fest is upon us a thought struck me - What food only available during festivals would you like to see offered all year round? Extra credit if you list where you want to see it served

My Picks:

Beijing -Styled Candied Strawberries (Lotus Cafe) - Joy of Tea
Croissant aux Escargot (France) - Les Halles
Lobster & Seafood Fisherman Pie (Ireland) - Yorkshire County Fish Shop
New England Lobster Roll (Hops & Barley) - Liberty Inn
Potato Pancake with Smoked Salmon (Scotland) - Yorkshire County Fish Shop
Spanakopita and Vegan Mousaka (Greece)

Duck confit - anywhere!
Belgium waffle with berries.
They used to have beef in a bao bun in China, would love to see that come back even to the festival.
I wish you could get the Boeuf Bourguignon at a counter service.

There are two items that have to be my favorite from Flower and Garden.
1. Duck and beans (can't remember the official name of the dish)- France
2. Chicken parmesan - Italy

My favorite at Food and Wine is the beef skewer with chimichuri at Patagonia.

My favorite at Flower and Garden is the onion tart from France.

There are other excellent dishes but if I could only get one thing at each festival, those would be what I would get.
