Thank you for all the responses! We've narrowed it down to the Port Orleans resorts, I'm leaning to Riverside because it looks much more open.
Which would you say has the quieter pool?

Glad you've narrowed it down to the Port Orleans resorts, and especially Riverside - it really is a great hotel in every way, but especially the landscaping and overall theme.

As far as pools go - the two main pools at the resorts are going to busier obviously, but too never noisy I would say, both about much the same. The pool at FQ is closer to a couple of room blocks so if you do end up in one of those ones you could get some noise. Riverside - as has been said - the main pool is on an island at the centre of the resort, and you'll only hear the noise when passing it.

With Riverside there are also the 'quiet pools', smaller pools dotted around the resort. You have got a much better chance of getting seats in the sun at these pools if you come back to the resort later than mid-morning, and as the name suggests, they are a lot quieter. The quiet pools are next to rooms at Riverside but never any noise from them that could be heard in the rooms.

If you stay at FQ you can use the pools at RS but its a bit of a trek for a quiet swim.
