One spot I love is sitting on the ferry that goes from the Poly to MK to GF and back again, especially during Wishes.

I love walking between the GF and Poly at night. Or at least I did 
Seeing Yehaa Bob at POR. This is a must do for me if I'm staying at POR.
Sitting around the outdoor firepit at AKL. Super relaxing.

Beach at the Poly watching the fireworks with a Rum Runner in hand.
Sitting on the porch at Crockett's Tavern just as the sun sets with a cold beer.

Two of my favorite spots at night are:
Epcot would be my number 1.. both Future World & WS are so relaxing with the backround music playing
Rocking chairs near the exit of BTMR overlooking the lake towards Haunted Mansion.. I love this spot at night.

Mine is also Epcot exactly like you said, spaceship earth is awesome at night along with the illuminations show, just gives off the best atmosphere, I also love going on test track at night, just another reason why Epcot is the best at night! MK is a very close second though!

Either Epcot- walking around and seeing the lights in the ground- or Magic Kingdom. Nothing beats sitting down and looking down main street at the castle.
