This is a very good topic. I love the music in Magic Kingdom but as I've grown older I have become really enamored with the original music used in Epcot's attractions. My main list would be:
1) Horizons Theme
2) Golden Dream-The American Adventure
3) One Little Spark
4) Listen To The Land
5) Grim Grinning Ghosts
6) Yo Ho, A Pirates Life
7) If You Had Wings
8) it's a small world
9) zip a dee doo daa
