Off to WDW on Thursday, and really looking forward to riding EE during soft opening, but there really hasnt been much coverage, of when its been open. Can I assume thats it been open everyday, except days with bad weather?

It will really be hit or miss. They are in the test and adjust phase right now so it could be open all day, not at all or an for hour in the morning and closed for the rest of the day. No one really knows. You best bet is to stop by there first thing and ask the cast member if and when the ride will be running. Just remember he/she might not know so be kind if you get the "It will be open April 7th" response.

As long as the attraction is in soft opening (which it is until the official April 7 open date,) there may be days or periods of the day in which the attraction is not operating. While it has been open every day since Thursday, WDI may feel the need to close it one day to do some test and adjust. While the chances of it being open when you are at WDW are really good, please don't feel disappointed if it is closed one day.
