In America...on the menu it specifies the differant kind of fish they serve..ie..Cod..Haddock...Catfish etc.

Pubs in England don't normally do a very good fish and chips, it depends. We have a lot of "branded" pubs over here i.e. they belong to big companies e.g. Six Continents, Punch, Weatherspoons...... their food is usually of the quick to cook, frozen variety, I wouldn't recommend F&C from these places. Some Pubs do better food; these are normally the privately owned ones.
If you go to what we would call a "chippy" (fish and chip shop) you will get proper fish and chips. The type of fish you get does vary regionally. Most of the country you will get Cod (as the standard), where I come from as I live on a fishing port we have haddock as the standard it is a cleaner fish, and historically the town kept the best catch and it was cheaper, the industry has declined, but we still stick with our Haddock.
Most chip shops do usually stock Cod and Haddock, but also Skate too. If you have fish of your own, some of them will let you take it in, they will batter it and cook if for you at a small charge.
Chip shops do not use frozen chips, they are fresh, and the best, and they are not of the French fries variety, they are much thicker.
