I like to listen to The Unofficial Guide's Disney Dish Podcast with Jim Hill. He has good history retrospectives.

Jim Hill's oral history of Disneyland is a must-listen.

The big one no one's mentioned yet is Season Pass Podcast.
It's more of a theme parks in general podcast than a Disney specific one, but Disney is the single most common topic.
Their interviews with Bob Gurr, Tony Baxter (many parts), Garner Holt, Gary Goddard, and others are just about the best insider's perspective you're going to get on the people that actually made Disneyland what it is.

I love his podcast, I would usually lesson to it while I'm playing Disney Magical World on the 3DS.
