Well some of the area would have a Mexican theme setting with the exception of the Castle of Wishes, Fantasyland, Tomorrowland, and ToonTown.
In some of Main Street, and the Mexican theme area yeah.LOL, I'm guessing they would have great Mexican food.
You could bring Grand Fiesta over from Epcot. It would fit in nicely with the park.

Well Adventureland has a more Spanish theme area.It would be interesting if you changed the themings of the lands. This way it would make people want to go to Mexico even more.

Nice, Encanto would go well in this section. I didn't care for the movie, but an attraction could be really good for it. Something like Mystic Manor.
You don't want to make the park too Mexican though. Afterall your supposed to be entering into new worlds. That would be like making only American themed lands in Florida and California.
Only Main Street, Adventureland, and possibly Frontierland are going to have a Mexican design while Fantasyland, Tomorrowland, and ToonTown are staying the same.
