I see early seating at 5:30-6:00. Does that mean you have 1/2 hour to get to the dinner? or are you assigned a time in between that? Also if we miss dinner due to shore excursions what are other options for food?

Usually arriving in between these times will be fine!

There are multiple options;
If you tell your Maitre D' in advance he will try squueeze you in later, if its too late then you could always book Palo that night or dine at the QS spots onboard

Disney sometimes staggers the arrival times between 5:30 and 6. They haven't done that for a while though. So your dining time on the Magic should be at 5:45. It won't open before that. They do like you to be there right around that time.

If you talk to your server and let them know you will miss dinner one night, they MAY be able to move your seating, but I definitely wouldn't count on it. There are lots of other options though - Topsiders is a great one, they'll be serving something similar to the main dining rooms. Otherwise there are quick service places up on deck 9 and room service is available 24 hours a day.
