That veggie Paella sounds delish (and I'm not a Vegetarian/Vegan/Anti-Gluten person!)

I have only had the non-veggie versions over the years. We have tried all three and all are good, but the "A la Valencia" version is stupid good.

I recently got a Paella pan and made it recently...I've tried it before without a good pan, and it just isn't the same.

My goodness is Paella delish!

I have been thinking about getting a Paella pan for my Big Green Egg grill, but it might wind up like other accessories I thought I needed then used once and put away.

Nope. Well worth it. Something once you've made right once will be something you all do several times a year.

The key is to let it char right at the end of cooking. Don't stir it, just let the rice toast...
