And pssst, here is a secret .... so is just about every pre-pack turkey, chicken, and ham product you see in the grocery store.

Check the packaging, it will say something like "may contain up to a %10 solution of salt water"

If you get a "natural" turkey, soaking it overnight in a bucket of salt water makes it very jucy and delicious - I do it every Thanksgiving.

Ofcourse they wont deliver them but even if they did personally I wouldn't want one, just the thought of eating one makes me feel a bit :hurl: haha.

Brine

The process of smoking dries meat out. Some types of meat worse than others. Turkey can dry out very quickly. It is impossible to smoke more than one turkey leg and have them all be juicy. Mainly because of the different weights of each leg although there are our factors involved. To help keep the turkey leg moist a brine is used. In it's simplest form it is a mixture of salt and water. It works through osmosis. The water is carried into to the meat and the only minimal salt remains. It is enough to leave you with a well seasoned turkey leg. My wife had me make a turkey dinner this sunday and as always I brined my bird for 4 fours.
