December or April (not easter) trip

I'm planning our bi-annual trip. For the last two trips, we have gone between Christmas and New Year's. 2008 just about killed us- I've never seen it so busy at the holidays! So, my question is this:

Do we go the week before Christmas 2010 or the first week in April of 2011 (Easter is late- the 24th)? I'm a teacher, so I am locked into the school calendar for vacations. I'm hoping other schools will adhere to the Easter break (opposed to us).

Oops! Another question: How early can you book?

Man that is a tough one. I'm in favor of Christmas just b/c I love it all decked out in holiday decorations. Since you been there over the holidays before why not switch it up and go during Easter?
