Closing Time vs. "Closing Time"

When Test Track was first opening we stayed until midnite to ride it, as it was breaking down all the time. Epcot closed at 9:30 like usual.

During Expedition: Everest's first summer of operation, I clearly remember being able to ride it 2 or 3 times after park closing one night. There was a manager out front waving us through the standby line.

I guess when I started this thread I thought this kind of thing was done all the time. Now I'm learning that this might have been just a rare occurence.

What are they doing at DHS, with the park closing time listed as 7 PM, but an 8:15 PM Fantasmic showing? Are any attractions open, or are they just directing people to line up for Fantasmic?
