My wife loves cinnamon rolls and I have heard something about a "sticky micky" and something about cinnamon rolls at AK! Can anyone give me more feedback on these or other locations for a sweet gift for my wife?

This would give me some good Brownie points!!!:lookaroun

They had Sticky Mickeys at the Concourse Grill at the Contemporary when I was there for breakfast a few years back. I am pretty sure all of the up-to-date guide books also mention that they still have them there.

Stickey Mickeys are wonderful! They are also very easy to make, care to give them a try?

Sticky Mickeys
from Contemporary Resort

Yield: 1 1/2 dozen

1 cup water (warm)
4 teaspoon yeast
4 eggs
1 stick butter
5 cups bread flour
3/4 cup cake flour
1/2 cup granulated sugar
2 tablespoons milk powder
1 tablespoon salt
1/2 teaspoon cinnamon
1/2 teaspoon orange zest
1 stick butter, melted
1 cup cinnamon sugar
Sugar Icing (see note)
Caramel sauce for serving (see note)

Heat oven to 380 F. Dissolve yeast in warm water in a large bowl. Let bloom for 3 to 5 minutes. Add the rest of the ingredients except last butter and cinnamon sugar, and mix at low speed with electric mixer until smooth and elastic, about 10-12 minutes.

Place dough in a greased bowl, cover, and let rise in a warm place until double in bulk. Punch dough down, and cut into 56 (1-ounce) pieces using a scale. Roll dough into small balls.

Take three balls, hold together, dunk in melted butter, and press into cinnamon sugar. Place in large muffin pan, sugar side down. Let proof in warm area, until dough is doubled in size again. Bake for 15-18 minutes, until golden brown. Take out of muffin pan while still warm. Cool, and cover with icing.

To serve, place a Sticky Mickey on a plate. Slit down into the Mickey. Pour caramel sauce into slit.

How to make sugar icing:
Mix 1 cup powdered sugar with 1 to 2 tablespoons water until sugar is dissolved and mixture is smooth and runs in a ribbon when poured from a spoon.

How to make caramel sauce:
Melt 1/2 stick butter in pan on medium heat. Stir in 3/4 cup brown sugar; mix well. Add 3/4 teaspoon vanilla and 1/4 teaspoon cinnamon and continuously stir for 5 minutes. Stir with a whip and slowly add 1 cup heavy whipping cream. Once cream is added, continue to cook for 5 minutes. Keep warm.

Tigsmom, need help!

After reviewing the formula on Sticky Mickeys I have a few concerns...

I do not know much about the flower, uh...flour. What is the difference between regular flour you use and cake flour and bread flour. (brand names work good for me too!)

Also, the only thing that comes to mind about "Orange Zest" is ..... SOAP?

What is orange zest? I very curious now!

Oh, my! I realized you were a man after you said that you were looking for cinammon rolls for your wife!

Cake flour comes in a box in the baking section. I can't remember the name, but it's something like "silk" or "smooth" in the name.

Orange zest is the outside of the orange. Scrape it off with a grater, but not too far into the white part, it's bitter. Good luck! I'm trying them, too!

Sorry, I was born that way! Thanks for the clarification on the orange thing!

If there is a news report about an explosion in GA then it might be me trying to make a sticky micky! :D

i love cinnammon, the smell and the taste.

here is what ive found cinnammon in in walt disneyworld:

- MAIN STREET BAKERY (magic kingdom) they are the tastiest and nicest.
- GOOFY CINNAMMON MINTS i bought a box of these from EPCOT they cost me about $3.
- in downtown disney there is a sweet shop by the virgin store its called something like "snow whites bad apple" or something like that and i think they have cinnammon sweets.

i still have the box of cinnammon sweets in my room and i always smell them and it reminds me of my holiday!

:xmas: only 114 days left!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

All purpose flour, cake flour & bread flour... there is a difference. Cake flour is very fine milled and bread flour is higher in gluten.

I think the most popular cake flour is "Swan Silk" (or something similar to that). You can buy store brands where available, they are just as good as the name brand. The type is clearly marked on the package.

As was pointed out, orange zest is finely grated peel (or rind)- the orange outside. Avoid the membrane underneath.

Good luck & let us know how they turn out.

OK what does being a man have to do with anything?? (see screen name/profession) :)

I just saw this thread, sorry I couldn't help earlier. BTW, an usually acceptable substitute for cake flour can be achieved by using all-purpose flour: for each cup of cake flour needed, use one cup of sifted all-purpose flour and remove 2 tablespoons of it.

What day and month did you and your first husband get married? This could be scary if the same!

Soap!

I just said that the first thing I thought of when I heard of "Orange Zest" was SOAP! I know not to put that into food...............now. :lookaroun

Ya'll are a hoot! Thanks for the info and laughs! Now I am working on understanding these instructions. How many sticky mickey's does this make! 56 divided by three - what do you do with the other two if it takes three for the design? I really would like to see a picture if anyone had one! I am a man and I need visuals!!!!!!
