Christmas Snack Recipes?

My family and I always have snacks on Christmas Eve, but this year I don't really want the same old thing. So.... I thought I would post this and let people post some of their favorite foods and recipes that they have for the Christmas Season. I don't really have a favorite right now (that's the problem), but I do like the homemade chex mix lol. So, how about giving me some good ideas :animwink: :)

My family does the same thing on Christmas Eve. I will check my recipe book and get back with you. One thing we had last year, which we have not had since I was a kid, is those little weenies wraped in cressent rolls...yum.:slurp:

Ever have one of those Bloomin' Onion's at the Outback...I think Chilli's calls it an Awsome Blossom. Well we have a contraption to cut the onion. My mom usually fries one up and makes a couple diferent sauces. Mmmmmmmmmm :D

My husband voluteered me to make homemade fudge like I used to do every christmas but havent in a long while and a Blackberry wine cake so looks like i am going to be baking a whole lot the next week

I tried this recipie a couple of weeks ago, they turned out pretty darn good. Make sure you roll the dough thin or else they won't hold.

Kolachky
Recipe courtesy Christina Gozdecki (foodtv.com)

2 sticks margarine, softened
6 ounces cream cheese, softened
2 cups flour
1 (12-ounce can) pureed fruit filling
Powdered sugar, for garnish

In a large bowl blend margarine and cream cheese together, by hand with a metal spoon. Slowly add flour until it is all incorporated and a dough is formed. The dough will be soft and sticky. Cover the bowl with plastic wrap and put in refrigerator overnight, or for several hours (until hard to the touch).
Flour the countertop. Take a handful of dough out of bowl returning the unused portion to the refrigerator (continue this process until all mixture is used). Roll handful of dough out into an approximately 1/4-inch thickness. Take a 2 by 3-inch diamond shaped cookie cutter, and cut as many diamonds as possible (size of kolachky should be two bites, so the cutter cannot be large). Take leftover dough and roll out again, cutting more diamonds. Repeat until all the dough is used.

Place the diamond cut out onto the palm of hand. Put a 1/2 to 1 teaspoon of fruit filling (apricot or strawberry or raspberry or prune flavors) into the center of the diamond shape.
Dip your finger in a little bit of water, put on one side of diamond. Fold lengthwise and seal the tops of the kolachky together to create a 3-dimensional diamond shape. Place on cookie sheets and bake in a preheated 350 degree oven for 10 to12 minutes.
DO NOT USE Super heat cookie sheets or any of the new non-stick coated cookie sheets. They will bake too quickly and burn the bottoms of the kolachky before you realize it. YOU MUST USE ANY KIND OF CHEAP COOKIE SHEETS usually bought at a grocery store. Cover the cookie sheet with foil or parchment paper. Do not grease the foil.

Look at your kolachky every few minutes, while baking, as ovens vary in heat distribution. The later batches may cook faster than the first ones. Check the BOTTOMS of the kolachkys. They are done when the BOTTOMS are soft golden brown. The tops may not look done, but they ARE! Remove from oven, wait 3 minutes, then remove to a cooling rack. When ready to serve, sprinkle with powdered sugar.

I have an easy one, that my friends always ask me to do. They are called "Mummies".
You will need a loaf of white bread, bacon strips, and strawberry jam.

Take a slice of bread, make it thinner with the roll (or whatever you want, could be rolling a glass on top of it to make it less puffy). Then put a bit of jam on it (a table spoon) and roll it closing it with the bacon strip around and keep it tight with a toothpick. Put it in the oven (or the little electric one) until the bacon fries (gets cooked) and before the bread toasts too much! :animwink:

Serve warm. People do faces when they hear what they have inside, but trust me, they eat more than one! :animwink:

i have one for these crunchy cookies made out of eggwhites sprinkled with crushed peppermints (it takes on the taste of the peppermint) they're great! i'll have to find the recipe though

popcorn balls are key durring the season!!!

act3 makes them pretty yummy (if you dont mind buying your snacks)
i think making them yourself might get a bit messy.

another yummy treat, mix in red and green sprinkles(jimmies, shots whatever you may call them...) they make them festve and they change the flavor a bit! mmm

lets see...
my roommates mom makes these M&M cookies that im not permitted to share the recipe publicly for
they are EXCELLENT though, so PM me if you want the recipe

I make those same cookies! They are so good....they just melt in your mouth.

Praline Graham Treats

7 graham crackers
1 1/2 sticks butter or Marg.
1/2 cup sugar
1 cup chopped pecans

Makes 28 treats

1: preheat over to 300 F. separate graham crackers into 4 sections. Arrange in a 9x13 inch baking pan with edges touching.
2: Melt butter in a saucepan over low heat. Add sugar, mix well.
3: Add pecans to saucepan: mix well. Bring mixture to a boil. Cook for 3 minutes stirring frequently. Poor over graham crackers, spreading evenly.
4: Bake treats until very firm, about 10 minutes. Remove to a wire rack to cool.

Hint: Line the baking pan with buttered parchment paper before arranging the graham crackers. Removing the treats will be quicker and easier.
These are best made 2 to 3 hours ahead to let the flavors blend.

I do a variation on the original "Chex Mix". I double the amount of mixed nuts plus add a cup of tiny breadsticks and add a cup of "Cheez-It's". We call it "Nuts and Bolts". I also make beef jerky for my friends at Christmas:

5 lb. flank steak, brisket, rump or bottom round
3/4 cup soy sauce
1/4 cup Worcestershire sauce
Dash of liquid smoke
1/2 t. pepper
1 t. seasoned salt
1 t. onion powder
2 t. garlic powder
1 t. garlic salt

Slice meat along grain into 1/4 inch strips. Trim away all fat.
Heat soy and Worcestershire sauces and add all other ingredients.
Add to meat in a closed jug.
Marinate overnight in refrigerator and shake jug a few times to distribute liquid over meat.
(Next day) Put meat in dehydrator for 5 to 8 hours.

Chiiit... everything was going fine until I read this. How does a "dehydrator" look like? I don´t think we have one of those in our kitchen! :( :animwink:

Ooops! I'm sorry Maria. If you don't have a dehydrator you can place the meat directly on your oven racks and then put the oven on it's lowest setting and leave the oven door open a crack. The idea is that you just want to dry the meat, not cook it. A good dehydrator is just so much easier to use. I have included the link for the type of dehydrator that I use. Hope this helps.

I guess it is not a very common tool in kitchens here... hehe :animwink: I can do the other option with the minioven I think! :D
