from the Hershey Kitchens:

CHOCOLATE DROP SUGAR COOKIES

• 2/3 cup butter, softened
• 1 cup sugar
• 1 egg
• 1-1/2 teaspoons vanilla extract
• 1-1/2 cups all-purpose flour
• 1/2 cup HERSHEY'S Cocoa
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/3 cup buttermilk or sour milk*
• Additional sugar


1. Heat oven to 350°F. Lightly grease cookie sheet.

2. Beat butter and sugar in large bowl until well blended. Add egg and vanilla; beat until fluffy. Stir together flour, cocoa, baking soda and salt; add alternately with buttermilk to butter mixture. Using ice cream scoop or 1/4 cup measuring cup, drop dough about 2 inches apart onto prepared cookie sheet.

3. Bake 13 to 15 minutes or until cookie springs back when touched lightly in center. While cookies are on cookie sheet, sprinkle lightly with additional sugar. Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 1 dozen cookies.

* To sour milk: Use 1 teaspoon white vinegar plus milk to equal 1/3 cup.

We have made these a few times and they will be on our cookie tray this holiday.

Chocolate Chip Coconut Macaroons
From the Kitchen of: wsapooh (Laurie)

1 14oz package coconut
1 14oz can Eagle Brand evaporated milk
2 tsp vanilla extract
1 cup chocolate chips

Mix all ingredients together in a large bowl until everything has a light coating of milk. Drop teaspoonfulls onto greased cookie sheet (butter flavor Pam works best) and bake at 350 degrees for 10-12 minutes or until light brown (toasted). Let cool completely before removing from the cookie sheet! Otherwise they'll just fall apart.

I'm going off memory on this one so don't actually try this until I've double checked it with my recipe card. I'm unsure of the size of the can of milk and the temperature of the oven. Will have that info for you very soon!

This was a big hit last Christmas (at home & at parties)...From Hood Dairy:

EggNog Cake


Makes 12 Servings

1 (18.25-ounce) pudding added yellow cake mix
Vegetable oil, according to package directions
Eggs, according to package directions
1 teaspoon nutmeg
1 cup Hood Golden EggNog (or try Hood Vanilla EggNog!), substitute for water (regardless of amount listed on package directions)
EggNog Glaze (recipe follows)

Preheat oven to recommended temperature on cake mix package. Spray sides and bottom of a Bundt pan with vegetable cooking spray, or grease with butter or margarine.
Combine dry cake mix with required oil and eggs, and nutmeg. Omit the required water, adding the same amount of Hood Golden EggNog in its place. Mix and bake according to package directions. Cool. Top with EggNog Glaze.

EggNog Glaze


Makes 1 ½ Cups

2 cups powdered sugar
2 tablespoons margarine or butter, softened
1 teaspoon vanilla
3 tablespoons Hood Golden EggNog

In medium bowl, combine all ingredients, adding enough EggNog for desired consistency.

Eggnog Cheesecake (source - Pam aka Kingdom Konsultants). She made this for me a while back and we make it every Thanksgiving and Christmas now. A staple in our family...thanks PAMMY!

Ingredients:
2 packages (5 oz each) chocolate laced pirouette cookies
1/3 cup graham cracker crumbs
3 Tablespoons butter, melted
2 packages (8 oz each) Cream Cheese, softened
2 cups cold prepared eggnog
1 3/4 cold milk
2 packages (4 servings size each) JELL-O instant pudding/pie filling, vanilla
or French vanilla flavored
1 Tablespoon rum
1/8 teaspoon ground nutmeg
Cool Whip Whipping Topping (thawed), optional


Directions:
Reserve 1 cookie for garnish, if desired. Cut 1-inch piece off 1 end of each of the remaining cookies. Crush 1-inch pieces into crumbs; set aside remaining cookies for sides of cake. Combine cookie crumbs, graham cracker crumbs and butter until well mixed. Press crumb mixture firmly into bottom of 9-inch spring form pan.

Beat cream cheese at low speed of electric mixer until smooth. Gradually add 1 cup of eggnog, blending until mixture is very smooth. Add remaining eggnog, milk, pudding mix, run and nutmeg. Beat until well blended about 1 minute. Pour cream cheese mixture carefully in to pan. Chill until firm, about 3 hours. Run hot metal knife or spatula around edges of pan before removing sides of pan.

Press remaining cookies, cut sides down, into sides of cake. Garnish with whipped topping and reserved cookies, if desired. Tie a ribbon around cake, if desired.

Prep time: 45 mins

Chill time: 3 hours

I even had a photo for the Eggnog Cheesecake, since we made it for Thanksgiving. And...my 12 year old nephew made this, so anyone can...it is just that easy and GOOD :slurp:

DATE NUT BREAD

Makes 24 servings


1 lb dates CHOPPED
2 cups water boiling
2 tsps baking soda
2 cups sugar
2 tablespoons oil
2 eggs
1 tsp salt
2 tsps vanilla extract
1 cup walnuts chopped
3 cups flour

place dates and baking soda in a medium bowl, cover with boiling water and let cool. place sugar and oil in a large mixing bowl and mix well. Add eggs, vanilla, salt and mix well. Add date mixture. Add flour and mix well. Place in a greased and floured bundt pan and bake at 350 degrees for 1 hour and 20 minutes. Cool on a wire rack.

This is a staple on our goody trays...I didn't make it one year and caught all kinds of flak. Its great with cream cheese. :slurp:

I havent started baking yet. We just finished putting up the tree Monday night, and last night was Rudolph, so, hopefully this coming weekend I will start. For what its worth, I do all of the Christmas baking in my family. I do most from scratch (spritz cookies that are like potato chips...you cant eat just one, Italian drop cookies, biscotti, etc) but I also 'cheat'. Thats right. I get those Nestle toll house cookies where all you have to do is break the little nuggets apart, put them on a cookie sheet and bake! They actually come better than my own toll house cookies :)

This year I am going to try one of my grandmothers recipes (I actually found one with real measurements instead of her usual "all the flour the eggs can take" stuff :lol: ) This one is a walnut pastry cookie. I used to help her make them when I was small, but this will be my first attempt to fly solo

AAAAAAAAH! *decarbs this thread* okay.... sugar cookies! Nothing fancy, just a really good cookie. :) (Makes a ton, too)

No Roll Sugar Cookies

1 cup sugar
1 cup powdered sugar
1 cup butter
1 cup vegetable oil
1 teaspoon vanilla
2 eggs
4 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt


Heat oven to 375

In a large bowl, cream together sugar, powdered sugar, and butter until light and fluffy. Add oil, vanilla, and eggs, mix well. Stir in flour, baking soda, cream of tartar, and salt, until well blended. Refrigerate at least 2 hours, or over night.

Shape dough into 1 inch balls; place 2 inches apart on ungreased cookie sheet. Flatten with the bottom of a glass dipped in sugar. Bake 5 to 8 minutes or until set but not brown.

Makes 9 to 10 dozen cookies

This holiday treat is a real crowd pleaser. Soft, yet crunchy with nuts and coconut. Take it to your next party and see how many people ask you for the recipe.

Estimated Times:
Preparation - 10 min | Cooking - 30 min | Yields - 2to 3 dozen bars



Ingredients

1/2 cup (1 stick) butter or margarine
2 1/2 cups graham cracker crumbs
1 1/2 cups chopped nuts
1 1/2 cups flaked coconut
1 3/4 cups (10-oz. pkg.) chocolate chips
1 can (14 oz.) CARNATION Sweetened Condensed Milk


Directions

PREHEAT oven to 350° F.

MELT butter in 13 x 9-inch baking pan in oven; remove from oven. Sprinkle graham cracker crumbs over butter. Stir well; press onto bottom of pan. Sprinkle with nuts, coconut and Shapes & Morsels. Pour sweetened condensed milk evenly over top.

BAKE for 25 to 30 minutes or until light golden brown. Cool completely in pan on wire rack.

Now, now, Vince, calm down. It's a popular ingredient in cookie recipes, available in any grocery store. Tasteless, but necessary to the proper cookie consistency.:)
