Love a little Disney every day!! ;)
Just a heads up, Christmas decorations don't go up until close to Thanksgiving.

If you search "Resort Christmas Decorations" on this forum you will find numerous threads discussing the various decor at the hotels. :)
Usually most resorts have them up by mid November around the 15th-16thish. :)

Key word... Usually. WL was not decorated until November 24 last year, we missed it by a day :(.
That's late and that sucks! We missed the Gingerbread house and comtemporary's display/decorations by like maybe 3 days last year. That's okay because we go a lot in early December so I guess not seeing them a few times we will live. Haha! We did get to see Osborne lights and go to the 1st MVMCP last year so at least we got to experience some of our faves. This year again we will miss everything completely because we will be there 10/13-10/26. But will be back for a December trip in 2017 to let our DVC points build up again. :)

If your timing is such that the resorts are fully decorated, GF is a can't miss. We stayed a few years back and there were a few nights where they had some holiday-themed entertainment in the lobby as well.

I think all of the Deluxes are prob worth checking out...I'm a big fan of coordinating resort dining with seeing the holiday decor.

The deluxe resorts look amazing at Christmas. I am going for my Disneymoon in November and we come home on 19th. I have a small glimmer of hope that some holiday theming would have started going up. Although it is a small glimmer.

Osborne Lights and Castle Dreamlights will be up the later part of the first week of November so those for sure you will see. The Resorts you should get a few days at least of seeing those before you leave. Usually the Gingerbread House/other decorations is up at the Grand Floridian by 15th-16thish and Comtemporary as well that same time but the other Deluxes vary and sometimes it's a week or so after GF and Comtemporary. You just never know but I do hope you get to see some of the resorts before you leave. :)

Grand Floridian, Wilderness Lodge, BoardWalk, Yacht and Beach, Animal Kingdom Lodge, Dolphin are all worth a look.

Contemporary and Poly are not worth a visit, nor are the values.

I was once told that Nov 17th is the magic day when all resort holiday decor is completed...and while this held true with our 2012 trip (woke up on the 17th and YC had been transformed over night)... @Tuvalu 's experience obviously proves that wrong. I'm wondering if the full resort decor date gets pushed back on years with a late Thanksgiving. Ultimately, we were there around Veteran's Day last year and we saw the gingerbread construction at the GF and the Contemporary, and that was it.
