Chef Mickey's or Minnie's Summertime Dine?

I've overbooked ADR's while I decide which to let go. Am I bad? Anyway, for our trip next month, I booked Chef Mickey's Fun Time Brunch for our non-park day for 11:30 . But, I hadn't thought about the Fab Four at Hollywood & Vine. So now on our HS day, we have Sci Fi for lunch and Minnie's without Fantasmic at 7:30 pm. I was trying to get Minnie's with Fantasmic, but could only get 2:35 pm. So, what would you do? Chef Mickey's Brunch on non-park day or Minnie's Summertime Dine dinner? Or cancel Chef Mickey's and Sci Fi and do Minnie's dine with Fantasmic instead at 2:35?

Good questions, and of course answers will be opinion-based. So...in my opinion, I would keep the Chef Mickey's Brunch or the Sci-Fi lunch. Minnie's gives you some good characters, but so does Chef Mickey's, and I prefer the breakfast food at Chef Mickey's over any meal at Minnie's. And Sci-Fi is just fun. (plus that 2:35 time at Minnie's is crazy - however, if you really want the pkg, you could try taking that time for now, and then keep checking back for a later time - I've heard that they release some later times as it gets closer to the date)

That said, I wouldn't worry too much about finding a seat at Fantasmic without the dinner package. Those guests do have a separate section, and can go in to sit on those hard-bleacher-seats-without-backs earlier than guests without the pkg, but there are plenty of good seats in the general seating areas. (Can you tell that we went in too early and were very tired of sitting on the hard seats before the show started?? )
