Looks like a great list!
The only suggestions I would make (and this really depends also on what the rest of your day's plans look like)...
1) For Brown Derby, if you didn't get the Fanstamic Package seating (assuming you plan to do Fantasmic that evening), call WDW-DINE and modify that reservation to that. There is no extra cost, but you have to specify that you want it. It will get you access to a separate entrance to Fantasmic as well as access to a reserved seating section. Well worth it, especially since there is no additional cost.
2) For Jiko, 8p is PERFECT timing. Be sure to show up at AKL early and go walk the Savannah. You'll be hitting it right about sundown, and you may find that there are CMs outside with a campfire going toasting marshmallows. We had an 8p reservation our last trip, and showed up about 6:30. We walked the Savannah, toasted some marshmallows, and got to Jikos about 7:30. They were able to seat us immediately. After the meal we went back out on the savannah walk (the part they don't gate off at night) and sat around the campfire in the rockers. It was a wonderful night!
3) If you get the change to modify Wave to California Grill, think about bumping the reservation to a later time slot. If you do it about 30 minutes before the Wishes fireworks, you can watch them from the top of the Contemporary.
