Yes. We do this all the time. We charge everything and then use the discounted gift cards we bought at Target or Sams. Saves us quite a bit of money. They just ask that you leave a credit card on file. We usually settle the bill the night before or when we check out.

I'm 45. I love getting carded.
On my 30th birthday I got carded on the way in to Pleasure Island. I freaked out, like it was the best birthday gift ever!
I can also confirm that you can continue to charge after you've checked out. I always do lunch on my final day at the Rose & Crown, and have no trouble charging to my MB.

I am so sorry, because I just know this is gonna be an eye-roller for many of you... But what are these gift cards of which you speak? Disney-specific gift cards? And you mention discounted cards...huh? This seems like a great way to get in front of a budget but I'm not sure I've seen them. Thanks in advance!
They are Disney specific gift cards. Sometimes places like Sam's or Target offer them at a discount if you jump through a few hoops. ( using their credit card to buy them) Amazon also will sell gift card packs from time to time.

I really like using the MB for purchases too; it is really convenient and we use it for all purchases in the parks. As another poster mentioned it makes it easy to track all your park expenses. We carry only a minimal amount of cash and one credit card when in the parks and use the MBs for everything.
The most important thing is to make sure you have your PIN set for you and anyone in your room that you want to be able to charge to the MB. Without the PIN you CAN NOT make charges. That is a security feature that makes sure no one else can charge to your MB should it be lost or stolen. You can set your PIN in MDE or at the motel desk when you check in.
Disney wants it to be really really really easy to spend money in the parks and not even think about it.
As with any electronic purchase make sure you keep all of your receipts. We had one instance where a meal was double charged due to a technical issue with the wireless terminals the servers use. We had our receipts and it was obvious what had happened and Disney corrected it with no problems.

Sams club sells Disney gift cards(and others) for a decent discount. The $500 card sells for $485 and the $150 card sells for $143. You can buy gift cards at Target and get 5% back using your Target Red Card. We have saved a lot by using gift cards. You can also stack savings by charging your purchase on a rewards credit card. Target offers 5% back when you buy gift cards using the Target Red card. We have purchased at Sams for a couple of years now and the savings do add up. You can also manage and combine all your cards online so you don’t have to carry a bunch of cards.

The My Disney Experience app also now has a charges section where you can track your spending as you go. Sometimes it takes a little time for things to appear but for the most part I find it quite fast and usually by the end of the day at the latest!

I save all the Target gift cards I get from my regular shopping there and buy Disney gift cards with them. At Target, the Disney gift cards come in denominations of $25, $50, $75, and $100. Also, I took advantage of the 10% off Target gift card sale before the end of the year and bought $2100 in gift cards (paid $1890 with the discount) and then went back to Target the next day and bought $2100 in Disney gift cards to pay off my vacation, which is a better savings than Sams gift cards. At Sams you only save 3% and have to have a membership, whereas at Target, you save at least 5% using their Red debit or credit card. At BJ's Wholesale, you can buy the $500 gift card online for the same price as Sams and not have to have a membership. On the Disney gift card site, you can combine the gift cards up to $1000 per card.
