Celiac/Gluten-Free question

My first post on any type of message board of any kind so bear with me.

We are visiting WDW next month with another family with whom we are very close. One of their daughters has Celiac disease and is on a gluten-free diet. This will be their first visit to WDW. My family and I are by no means WDW veterans as we have only visited once.

I think I've read just about everything I can find on the internet regarding special dining requests at WDW and the like. I've even purchased a couple of books in order to research the issue. I've found a few entries the message board but some of it is a little dated.

My question is this: Has anyone had any specific experience making arrangements for a Gluten free diet at WDW? Were any restaurants better than any others at accommodating such a request?

I think I'm familiar with the process WDW has in place for such requests. However, over the past few months as i've been following this message board, i've been very impressed with the insight and knowledge of the posters. Any insight or knowledge on this particular issue would be greatly appreciated. Thank you.

I have booked clients that have had celiacs and the restaurants at Disney were wonderful when it came time to set up their reservations. I gave the phone numbers of all of the restaurants that I booked for them to them so they could call with any concerns after I notated on all of their reservations about having a gluten free diet. The Chef will come out and speak to you at your table and make suggestions also.

Disney is the one place that really goes above and beyond when it comes to special dietary needs.

I have Celiac Sprue and have been gluten free for 12 years. Knowledge on this disease has really come a long way since I was diagnosed. Three years ago was my first visit to WDW being gluten free. I'm always uneasy going out to eat and very used to eating very plain, bland food. To my surprise, my dining experiences during that trip were absolutely unbelievable! My husband and children were envious with the treatment/food I received (well, actually they were really happy for me :)). When it comes to food intolerances/allergies WDW goes above and beyond! I was hooked (my family tells me I'm obsessed). I'm currently planning my 5th trip to WDW this Thanksgiving :sohappy:.
Some key points.... When you make your TS reservations, make sure wheat/gluten is indicated on the reservation. Once you have all of your reservations, contact disney at WDW.Special.Diets@disney.com. They will send you updated information on gluten free foods at the various parks and resorts. They will also send you a special dietary request form. You will put the dates, times, and locations to your TS reservations. Once they receive your form, they will contact all of the chefs. When you get to the restaurant, the chef will come to your table and discuss your options. If it's a buffet, the chef will walk you through the line and explain what foods are GF. They usually offer to make additional items/GF versions of some of the dishes and the always have GF rolls! QS is also easy. Request to speak to a manager about GF options. The manager will discuss the GF options, take your order, and bring your meal to you.
My family and I have had so many special dining experiences at WDW. Some chefs even provided extra special treats for my children and husband!
