Your arrival day sounds great. That is what I always do, especially with extra magic hours (I recommend hitting the 7 dwarfs mine train with your 7 and 5 year old during extra magic hours, since the line is always long during normal park hours)
Nothing to really say about your first day. Swimming sounds good. (I always stay at the Grand Floridian, but I have heard that AoA's pools are really fun for kids)
Maybe go to Animal Kingdom in the morning. Epcot is enjoyed more by older audiences than younger. Also many rides are closing there in August, so I recommend Animal Kingdom in the morning and Disney Springs at night. Go to Epcot on your fourth day in the night.
On your fourth day you can boat to the Boardwalk from HS, then from the boardwalk, walk to Epcot. Trust me, the walk and boat ride are both very short. (Use a stroller for the baby, if you don't want to carry her)
On your departure day you shouldn't go to Animal Kingdom, since lines will be crazy there (Pandora). Chose a park your kids really enjoyed. That is probably your best bet.
