Can managers at hotels give interviews?

Be careful with what you do with distribution of your interview. I'd guess that the manager you spoke with could get in a lot of trouble with his superiors.

Only thing I plan to do with it is submit it to my professor who was also once the GM of the Swan. I’m sure Disney isn’t going to fire a dude for answering questions like, “what is your favorite part of the hospitality industry?”

5 questions are probably within the realm of normal guests asking and the student apparently was asking for personal, rather than official corporate, experience.

I hope you're right. I was strongly reprimanded a few years ago for taking a picture of a room whose online pic was way out of date. It was totally innocent, and I almost lost my job over it. I'm hoping your guy is luckier.

A manager would typically get permission to be a part of the interview prior to speaking to you. If the manager didn't, that is on him/her.

Perhaps, but don't they get a lunch break?
Yes they do but it's complicated.... As mentioned the manager would have to really want to do the interview. And get permission, that being the case they have to be on the clock. Back to not eating in public.
