I'll start off by saying that Mr. Toad and Moley appear on The Many Adventures of Winnie the Pooh in Owl's House.

The scanner in "Star Tours" features a number of cameos. Buzz Lightyear, Madame Leota, Stitch...

And in the original version of the ride, there was a droid in the queue who was supposed to look like Kermit the Frog. It didn't look that much like him, though.

I could be wrong but when I just rode it a few days ago I thought it looked just like her. I even got a picture to her.
