we have no plans to go to the parks for a long while (was just there at Christmas). So if we hit that five year mark when $$$s begin to expire and don't have plans, can I get the rewards card and then just buy gift cards at a Disney Store and just build those up?

Just get a cash back credit card like the Freedom and put the cash back in a Disney account.

Freedom just came out with 1.5% cash back on everything and the current Freedom is 1% and has 5% bonus categories every quarter.

The rewards cards do not expire anymore starting this year for the Disney Visas. So yes if your points are about to expire just request a rewards card and get Disney gift cards or you can leave it on your rewards card being they no longer expire in a year now. :)

But I have the Disney Visa and earn on that. Also what I did this last trip was buy gift cards at Target on the Red Card (so 5% discount), and then when I got the bill from Target, I cashed in my Discover $$$s to pay the Target bill, so it was like free gift cards. We spent 9 nights @ Coronado Springs, 7 park hopper tix and free dining and all it cost me out of pocket was $175 because of all the points on my Visa and Discover cards.

Hey, its great to be saving even though youre not anticipating going for a while. Then when the trip booking becomes a reality you are further ahead and not scrambling to find way to save or come up with the bucks. I'm constantly putting money aside for the next one, then when I find I've reached a goal I've set I begin saving money for some extra things that I wasnt originally planning on doing, and making my trip even better.
