It tends to depend on the restaurant I believe. For instance, I've heard of people walking in Trails End, but you would probably never get a walk up at a place like Crystal Palace in MK.
What buffet were you considering so maybe you can get some better ideas of if it would be feasible.
I was considering Crystal Palace and Boma. I know they are considered "table service", but I was unsure if you had to make ADRs because you essentially serve yourself. From your response, it sounds like you do have to make reservations....right?
I would highly recommend reservations for either of those places, as they are very popular. I would probably guess that a Crystal Palace walkup especially would be next to near impossible unless the stars were lined up perfectly in the sky with Venus at a certain degree (you get my drift, lol) since it is actually in the park.
I've never been to Boma, but reading forums and sites, it seems quite a lot of people rave about it. Since it is more out of the way, you may be able to get a reservation the same day you wanted to go, but, you should probably play it safe and make one before. There is no penalty for cancelling it.
I think a big part of attempting a walk up on any restaurant is to do it not during peak eating hours. We were able to do a walkup at Teppon Edo in Epcot over Memorial Weekend by arriving just prior to the lunch rush. We had no wait to be seated, but when we came out, the waiting room was packed.

p.s. With the introduction of the Dining Plan, more people are utilizing the restaurants, which in turn makes walkups harder.
