The only boats that are on "tracks" are the riverboat in the Rivers of America and the Jungle Cruise boats.
Though really they're more of a guide-rail than a track. The boats are still floating in the water, but the rails keep them within a set path (with a little "give" in their freedom of movement)
All of the other boats used (TTC-MK ferries, Bay Lake and Seven Seas Lagoon watercraft, Friendships in Epcot and Crescent Lake, the occasional boat that still plies Discovery River in Animal Kingdom) are all free-floating, captain-steered vessels.

Yep..there are photos of MK construction that clearly show a track/rail at the bottom of a drained ROA.

Rather than a "track", think of it like the Tomorrowland Speedway with a rail going down the middle. On the Speedway, the car is free-moving and has some range of motion, but the rail keeps it from going too far to either side.
The riverboat is just like that, but with a much more limited freedom of movement left or right. I also believe there's guides under both the front and the back of the riverboat, to keep both ends within that strict envelope of travel.
The Jungle Cruise boats are essentially the same thing, too.
