Yep, it was called "Minnie's Suprise Party". It was part of Mickey's Birthdayland, which is presently Mickey's Toontown Fair.
YES YES!! Thats it!!! We used to g see it ever year and I remember going and it was gone.. and I remeber being so sad as a kid... oh well... Know of any web site I can go read up on it or see pics?

Well, I know of at least two sites. Started By A Mouse has some pictures from the show and WDW Song Archive has the lyrics from the show.
