Birthday Cakes

I haven’t been baking and sculpting as much lately, but these are some of my favorite Disney cakes that I’ve made. I have to admit that it was kind of nice having Disney make some of our cakes over the years. Takes off a lot of the pressure.
How did you do your maleficent dragon? is there wire in it or a base? Or just fondant?.. i dont know all the terms :( Beautiful work though

Thank you! If I recall correctly, it was a wooden dowel in the center, but toothpicks to help with the connection of the finer details. Well, that and edible glue. Meringue powder mixed with water as well as fondant/gumpaste pieces helped keep it all together long enough for pictures. My older one sprung that on me last minute, so I didn't labor over it like some of the other pieces.

I think I might just get one of the regular dome cakes they have. My daughter likes vanilla over chocolate, but that one is white chocolate and vanilla. Anyone tried it, taste decent?

The Mickey dome cakes are WEIRD. Maybe it's what they need to do for the shape, but the outside is a jelly-ish coating and the inside is kind of pudding-like.

I never seen anyone bring up what they're actually like so maybe we just got a bad one, but ours' ended up getting thrown out with a lot left.

You're welcome. I'm surprised how little people mention these things, considering they're everywhere. I went searching for reviews or a photo of one cut because I didn't want to ruin it based off just my opinion but there seem to only be articles announcing they're coming then no one reported on how they taste.

I did find someone else who doesn't seem to hate them describing what they're like, for what it's worth.

I couldn't' find much either, which is why I had asked. I am with you, I think on this cake, it might be some folks thing, and my son might like it, but my daughter, the birthday girl probably wouldn't take a bite of it if it is as you described.

The dome cakes became a thing after Amorette's opened in Disney Springs. The ones Disney sells do not appear to be affiliated with Amorette's, but I strongly suspect the addition of them was a reactionary response from 'the mouse'...especially since Amorette's doesn't deliver to the Disney resorts (unless this has changed). The jelly-like coating is usually a mirror glaze, which is made up of unflavored gelatin, granulated sugar, corn syrup, sweetened condensed milk, melted white chocolate, food coloring, and sometimes flavoring additives. I have not had any of the Disney dome cakes, but I know Amorette's domes are coated in such a glaze. Theirs are actually pretty good, but like fondant, not everyone loves mirror glaze.

The first cake below was one we ordered from Amorette's in 2016. I regret that I didn't take any interior pictures, but you have to admit that the glaze creates a really nice sheen. I borrowed the second pic from DFB, which illustrates how Amorette's does theirs. I'm curious if Disney's are like this as well. You've basically got cake on the bottom and mousse layers on top to create the dome.

I suspect quality control and time management are behind the design. I've baked domed cakes. They take a ridiculous amount of baking time and often have to be a bit overbaked to keep that structure. Trying to layer them with frosting or filling is usually a disaster since it messes with the dome shape, so you either are stuck with solid cake or you hollow out the bottom and load in a bunch of frosting, fruit filling, or mousse.

The third cake is one of the ones we've ordered from Disney's bakeries. When Disney does the large mouse ear cake toppers like this, they don't mess with cake or mousse...it's all white chocolate. It's pricier than the chocolate dome cakes, but probably more enjoyable.
