Best way to get to MK on a 7AM EMH Day?

That depends on when the buses start running and what time you leave the resort. Even driving at that time will not necessarily get you there that far ahead of time. But, I will let someone that has perhaps experienced it, make the final call on your question.

Not sure if this still happens or not, but we drove to MK from POR for early EMHs one morning, and they stopped us at the TTC. They wouldn't even let us get in line for the monorail or ferry until the EMHs started. So we weren't able to even get over to the gates until most of the EMHs were over. Since then we've always taken a bus for early EMHs, because the bus takes you right to the make gate, where they let you wait right inside the turnstiles. I'd recommend being at the bus stop 45 minutes to an hour before you want to arrive, just because the bus trips can take a little while, and buses can take 20 minutes to get to the bus stop itself. Plus, lines are sometimes pretty long at the bus stops for early EMHs.

Disney transportation WILL get you from your resort to the park in time for EMH park opening. It may not get you there as early as you're proposing.
Check with guest services at the resort the night before for bus timings and plan accordingly

Busses will be running, Disney plans accordingly for thousands of their resort guests to get to EMH. They want people there or else there's no point to have them. I think it's weird that Disney doesn't let people at the TTC on the monorail early. That's one of the reasons we park at the Contemporary in early morning then move to TTC later to pay and park, wait, what?

Definitely go with the bus for EMH. It's almost guaranteed that you will get there faster, so long as you get to the bus stop at your resort nice and early.
If you make sure the clocks in every other room on property are set back 3 hours, you don't have to get up so darn early. I've even set all the hotel room clocks in the greater Orlando area back 3 hours. Word of warning though - You have to bribe A LOT of cleaning folk the day before. I mean A LOT.

I took the bus (from the Swan, even) and got there plenty early to catch the opening - no problem.

If it were us, we would drive up World Drive, park and go by monorail.
