When you go to the park in the morning try to get into the town hall without your soon to be fiancee there. Explain what you are going to do and see if they could squeeze you into Cinderella's Royal Table. It won't hurt to ask. There could be a cancellation
If they can't then my choice would be the Plaza. Excellent food and nice atmosphere.
You also could try Tonys Town Square-It is based on the restaurant from Lady and the Tramp. You guys could reenact the spaghetti scene.

If you're looking for a QSR then I would definitely go to Columbia Harbor House across from Haunted Mansion. It's got the best, most varied selection IMO of all the QSRs. If you're looking to go for table service, I'd hop on the monorail and either go to Kona at the Polynesian or the Grand Floridian Cafe.

Why not go to the Grand Floridian for Afternoon Tea? It's an absolutly beautiful and romantic spot, the food is light and delicious (tea sandwiches, strawberries and cream, pastries, cheese platters, etc.,), and you can have a lovely glass of champagne as well as tea. I think it would be a very cozy and romantic way to celebrate your engagement.
