I see your point. The day I was in the castle it felt almost empty. Maybe because it rained. I think it is better not to leave it up to chance though like your saying. I wonder if Disney offers any other package.
I saw this gorgeous picture of this proposal during the fireworks at disney, and I don't know where they were standing but it looked just beautiful.
I'm sure there are many wonderful ways to propose and places to be at Disney for such an occassion that would be just magical.

Another vote for a Monorail loop restaurant of you're looking for something romantic and more intimate.

Hopefully you'll write a post-proposal trip report and let us know how it went! I'm sure she will LOVE it!

If you're still more than 180 days out, I would try to get a reservation at Be Our Guest. My family was seated in the West Wing last month, and found it to be a quiet & intimate location. Plus, you have the rose in that room, which is beautiful. There was a couple I assume on a date next to us, the girl was all dressed up & seemed so excited. I remember thinking that it would have been such a nice date location.

I think on the bridge between the Beach Club and the Boardwalk during illuminations would be pretty good.
