You know, I do that a lot. Answer the wrong question.
Some ones you may/may not have tried...
Dixie Landings (called the "Colonel's Cottom Mill" or something like that). The red beans & rice are good... or you can get a chicken sandwich, burger, pizza, or (I think) ribs. What I really enjoy about that place is the theming... very rustic; it's like you're in a working mill. Plenty of water views outside.
Coronado Springs has a lot of options.. freshly made burritos, grilled fish, stir-fry, and much more at the "Pepper Market". It's very good food in a nice atmosphere... prices a little higher than other areas.
DAK Lodge has a QSR near the pool. Also upscale, with good food and of course you can't beat the themeing for that location.
Beaches and Cream at the Beach Club, for burgers (single, double, triple), shakes and fries. Stroll on over from Epcot. Stroll on back to walk off a few of those cals.
Quiet (most times) little lounge with booths and tables next to the Yachtsman Steakhouse... where you can grab an excellent burger in a wood-paneled, comfortable location.
If we can venture a little from 'resorts' per se, Wolfgang Puck's fast food outlet at Downtown Disney West Side (and Marketplace) is a good quick stop... again, upscale, California Contemporary offerings.
