Based on the operating hours of other shops at the resort, I'm guessing it closes at 11:00 pm.

Complete guess. It's either that or some other time between 10 and 11...

I would probably say 11:00 also, here is a website that gives lots of info on the Poly http://www.allearsnet.com/acc/faq_poly.htm. I do know that Pop Century's closes at midnight, but most other hotels it is 11p.
