If I am not mistaken many are concentrated liquids similar to air fresheners spread by fans or compressed air.
A WED developed `Smellitiser` - a device that looks like a long tube, provided as Yoda said in liquid form by an outside vendor. The tube `shoots` the spray out, and when they were installed in rides (Energy, SSE) there were also extraction fans to remove the smell on the other side of the room so it didn`t float around.
