Are theme park QS open after closing time?

Noticed on our last trip that we wasted a lot of time eating dinner in the parks. After we finished dinner, we'd have time for maybe one ride before closing. Could wait until getting back to the resort, but I think maybe by the time you got there, they were only serving pizza (value resort). I've heard table service restaurants take reservations right up to or even after closing time. Is the same true of any QS restaurants? Can you get in line for your last ride just before closing, get off the ride half an hour after closing, and still get something to eat in the park? Or at least ride rides almost up to closing and then pop in to a QS 5 minutes before closing, and not actually leave the park until nearly an hour past closing?

It depends on the location. Some will stay open right up until closing, others will start closing earlier. The times guide should tell you if any CS location is following different hours. I seem to recall Casey's sometimes staying open a bit later, but on the whole, they will close when the park does.
As far as eating back at your resort, it depends on the resort and season. Most usually have food lines open until 10, may run a smaller menu til 11 or 12. So if its slower season and the parks close at 9, then you should be fine getting food at the resort. But if its summer and you are doing evening EMH and don't leave until 1, everything would be closed.

I'd suggest planning your meals in advance. Know what you would eat at what location (look at menus online in advance), and eat at off hours. If you do dinner at say 5 instead of 7, there is usually little to no wait, and you can easily be out in under 30 minutes. If you eat at the same time everyone one else wants to, it will end up taking longer no way around it.
