Any fun countdown ideas?

We are getting close--heading out on June 2. Any ideas for fun little things to do with my family (an 8 year old and 11 year old) to build excitement (more than is already there!) in the next 2 weeks? I'd love to have some fun activities/surprises to lead up to the trip so that it lasts longer! Thanks for any advice you might have.
 
Here's my thoughts:
- Countdown Paper Chain (always popular - I even make one at work with paperclips when I get close)
- Hidden Mickey Meals - make mickey ear pancakes or put other food on their plates to make a Mickey, encourage them to see if they can make their own
- Tink on a Shelf - You'll need to go pick up a tinkerbell somewhere (or you could print out a paper one probably) and do it just like Elf on a Shelf
- Pre-pack - pull out the suitcases and have them pack something each night, pair of shorts, a shirt, and let them watch the suitcase fill (and save you some last minute packing) :P

A few things we have done... I'm assuming your kids know, and it is not a surprise.

1. I made a coloring countdown page out of clip art mickey heads - as you fill it up, you get closer and closer to your trip. More concrete for little ones.
2. Themed dinners - with disney party supplies
3. Movie nights
4. Disney game nights

If it's a surprise, or maybe a surprise for a special dinner - a scavenger hunt to the answer is always fun.

Surprises of pins, new matching shirts, ears - can never go wrong with new loot!

How about some Disney trivia questions each day then some small prize that they can take like stickers or glow necklaces; you know the stuff that they want to buy at WDW that is seriously over priced. I bet you can score some stuff from like the dollar store that is Disney based.

Oh! How about "mail" from the characters! Write letters to the kids from some characters telling them how excited they are that they'll be coming to visit. Each day stick one in with the regular mail as a surprise. You could also have them write a letter back. You can actually mail it in and Disney will send them a postcard back (princess or Mickey depending on who you wrote to it seems).

We've done trivia questions in their lunchboxes. If they don't take their lunch to school, maybe you could slip it in their backpack or planner/agenda.
