With the kids or without?
I would think that without the kids, if she is adventurous, maybe parasailing. Something I am dying to try.
With the kids, maybe the balloon ride at DTD. It looks nice and romantic. Then dinner at a fancy restaurant like V&A.(this part with out the kids though)

I'm not sure if you consider this cheesy or not, but, they have nighttime, romantic carriage rides at POR and they aren't very expensive....

If money isn't an issue, try an Illuminations Fireworks cruise. My husband arranged one of these for my 40th birthday last year & it was awesome! It leaves from the marina behind the Yacht Club and goes down to Hollywood Studios then back to the International Gateway to tie up for viewing of Illuminations. The captain we had was a nice young woman that had some interesting tidbits about the area & the fireworks show itself. Drinks (sodas & bottled water) and Snacks (chips) are included in the price. You can also put up to 10 people on the boat, if you choose to. (There were 6 adults & 1 child when we did this.) Everyone had a great time. The downside is that it's around $300 plus tip, but it was well worth the money for a special occasion.

For our 1st anniversary, my husband had a special delivery brought to our room as a surprise. There are a lot to choose from at disneyflorist.com - he got me flowers with a glass slipper. You could also have a specialty cake made & delivered to your room, or any restaurant as well. I had one delivered for my husband on his birthday to our room one year, turned out great.

Another thing to consider is to use giftsofalifetime.com to have something special done. They will custom make an experience for your wife based on her interests/age/favorite characters, etc. It's expensive, but well worth it. On my honeymoon, my husband used them to set up a scavenger hunt around the Magic Kingdom for me. I had no idea what was going on, or how it was going on, but it was a lot of fun & something I'll never forget.

Good luck!

Wild Africa Trek

My husband and I did the Wild Africa Trek on our anniversary last year. Bonus tip: They give you a photo pass of your trip, and if you do it at the beginning of your visit, you can use it the rest of your vacation, and they send you a CD with every picture taken on it. The tour was amazing, and the photos are priceless.

We also went to V&A for dinner that night. It's spectacular, but the best part was being all dolled up and going to MK to see the fireworks after dinner (and, of course, get our pictures taken in all our finery in front of the castle). It was so special.

You also could take a blanket (and maybe a bottle of bubbly) out to the beach at the Polynesian to watch the fireworks.

I love romance at WDW!
